Ingredients
  • 2Cup Chopped Onion
  • 1Cup Chopped Celery
  • 1Cup Chopped Green Pepper
  • 2Cloves Chopped Garlic
Roux
  • 1 Cup OilCanola
  • 1 Cup Flour
Proteins
  • 3/4Lb ChikenCubbed
  • 1LB Andouille SausageSubstitute any other sausage
  • 1LB Shrimpdeveined, deshelled
Finish
  • 2Leaves Bay
  • 2TBSP Creole seasoningTony Chacheres or your favorite
  • 8Cups Chicken Broth
  • 1/4LB Chopped OkraFresh or Frozen
Instructions
Roux
  1. Warm oil
  2. Whisk in flour
  3. stir continuously
  4. Until light brown (Dunkins light Coffee)
Gumbo
  1. Add veggies to stock pot, saute for 3-4 minutes
  2. Add roux and saute for 8-10 minutes until veggies are soft
  3. Add garlic and creole seasoning, saute for another 1-2 minutes, until fragrant
  4. Add 6-8 chicken stock and bay leaves
  5. Bring to a boil, reduce to a simmer for 45 minutes
Sausage
  1. While Gumbo is cooking, brown sausage
Finish
  1. Stir in chicken, sausage and okra
  2. Cook for at least 45 minutes, the longer the better to mix the flavors
  3. 10 minutes before serving add shrimp
