Instructions
Roux
Warm oil
Whisk in flour
stir continuously
Until light brown (Dunkins light Coffee)
Gumbo
Add veggies to stock pot, saute for 3-4 minutes
Add roux and saute for 8-10 minutes until veggies are soft
Add garlic and creole seasoning, saute for another 1-2 minutes, until fragrant
Add 6-8 chicken stock and bay leaves
Bring to a boil, reduce to a simmer for 45 minutes
Sausage
While Gumbo is cooking, brown sausage
Finish
Stir in chicken, sausage and okra
Cook for at least 45 minutes, the longer the better to mix the flavors
10 minutes before serving add shrimp
