Cajun Gumbo

Ingredients
- 2 Cup Chopped Onion
- 1 Cup Chopped Celery
- 1 Cup Chopped Green Pepper
- 2 Cloves Chopped Garlic
Roux
- 1 Cup Oil Canola
- 1 Cup Flour
Proteins
- 3/4 Lb Chiken Cubbed
- 1 LB Andouille Sausage Substitute any other sausage
- 1 LB Shrimp deveined, deshelled
Finish
- 2 Leaves Bay
- 2 TBSP Creole seasoning Tony Chacheres or your favorite
- 8 Cups Chicken Broth
- 1/4 LB Chopped Okra Fresh or Frozen

Instructions
Roux
- Warm oil
- Whisk in flour
- stir continuously
- Until light brown (Dunkins light Coffee)
Gumbo
- Add veggies to stock pot, saute for 3-4 minutes
- Add roux and saute for 8-10 minutes until veggies are soft
- Add garlic and creole seasoning, saute for another 1-2 minutes, until fragrant
- Add 6-8 chicken stock and bay leaves
- Bring to a boil, reduce to a simmer for 45 minutes
Sausage
- While Gumbo is cooking, brown sausage
Finish
- Stir in chicken, sausage and okra
- Cook for at least 45 minutes, the longer the better to mix the flavors
- 10 minutes before serving add shrimp
