  • 2 Cup Chopped Onion
  • 1 Cup Chopped Celery
  • 1 Cup Chopped Green Pepper

Roux
  • 1 Cup Oil Canola
  • 1 Cup Flour
Proteins
  • 3/4 Lb Chiken Cubbed
  • 1 LB Andouille Sausage Substitute any other sausage
  • 1 LB Shrimp deveined, deshelled
Finish
  • 2 Leaves Bay
  • 2 TBSP Creole seasoning Tony Chacheres or your favorite
  • 8 Cups Chicken Broth
  • 1/4 LB Chopped Okra Fresh or Frozen

Finish

Instructions
Roux
  1. Warm oil
  2. Whisk in flour
  3. stir continuously
  4. Until light brown (Dunkins light Coffee)
Gumbo
  1. Add veggies to stock pot, saute for 3-4 minutes
  2. Add roux and saute for 8-10 minutes until veggies are soft
  3. Add garlic and creole seasoning, saute for another 1-2 minutes, until fragrant
  4. Add 6-8 chicken stock and bay leaves
  5. Bring to a boil, reduce to a simmer for 45 minutes
Sausage
  1. While Gumbo is cooking, brown sausage
Finish
  1. Stir in chicken, sausage and okra
  2. Cook for at least 45 minutes, the longer the better to mix the flavors
  3. 10 minutes before serving add shrimp
